The idea seems to be to let users add jobs the need to do or have others do. Jobs that I need to do should be kept private. I should be able to edit any job that has no applicants - allowing me to request help for a job that I planned on doing myself but changed my mind. Deleting and Adding is a pain.

You can add jobs that need to be done. By you or by other persons. Sure, there are some jobs that are just for you and for no one else, but that's not what Jobazaar is meant for. At least not yet.
We will consider the 'edit' option you suggested.
